Ingredients:
10 medium eggs
180 gr. crystal sugar
1 vanilla pod
200 ml brandy
Needed:
kitchen thermometer
Large pan
A bowl that can hang in it on top of the water
A large bowl that can contain the first bowl + water
A whisk
Split the eggs. (Put the white aside, it's not used here.)
Take a large pan, half with water, bring ALMOST to the boil.
Take a bowl that can hang above the water in the pan and can deal with the heat.
In the bowl: mix the egg yellow with the sugar until it's a smooth mixture.
Take the vanilla from the pod.
Add it to the mixture and add the brandy too.
Take a large bowl and fill it with cold water.
Hang the bowl with the egg mixture above the almost boiling water,
Use a kitchen thermometer > put it in the bowl, not touching the bottom.
While stirring: heat the mixture to exact 62 degrees Celcius. It takes 10 to 12 minutes.
Mix well, also the bottom and sides.
The mixture should not solidify.
And it should not cook at all. Just warm it to 62 degrees.
If the mixture reaches 62 degrees, take the bowl and put it in the cold water.
Keep stirring when the mixture cools, for about 5 to 7 minutes.
Let it cool down further for about 2 hours.
Put the mixture in a glass container and keep it in the fridge during the night.
The longer you keep it the thicker it becomes.
Serve with a bit of whipped cream and sprinkel some cocao on top or add a chocolate.
It can be used in banana split.
Slice a banana in the length,
put it in a lengthy deep plate
pour advocaat over it
chocolate in one way or another: sprinkles, grated. etc.
